Rin is the heart of our house — a first-harvest, single-cultivar matcha shaded for twenty-one days before plucking, then stone-milled in the cool of morning to preserve its volatile aromatics. The result is a thick, almost creamy koicha with no astringency and a long, sweet finish that lingers like a held note. Reserved, dignified, complete.

The Legend
In the year 1191 the Zen monk Eisai returned from Song-dynasty China carrying tea seeds and a secret: leaves ground to powder and whisked with hot water. In his Kissa Yōjōki — “Drink Tea, Nourish Life” — he called the green bowl “the most wonderful medicine for nourishing one's health, the secret of long life.”
The monks of Kyoto planted his seeds in the misty river-valley of Uji, and there, behind reed screens that dim the sun, the leaf learned to grow sweet and deep. Eight hundred years later we still shade it by hand and turn it on granite — so that this bowl tastes of the same stillness the monks first knew.
