The Legend
In 1920s Kyoto, with the market slow and the leftover leaf and stems piling up, a thrifty tea merchant did the unthinkable: he tipped the humble remnants into a hot pan over charcoal and roasted them until they turned amber and fragrant.
What should have been waste became one of Japan's most loved cups — toasty, caramel-sweet, gentle on the evening and low in caffeine. Hojicha is wabi-sabi you can drink: proof that the plainest thing, treated with care, can become the warmest comfort in the house.
